i love food

so, i love food. whenever i visit my friend, laura, in chicago, she asks,"what do you want to do?" we always go to food. "we could get pizza when i get there, and then i can make dinner the next night..." yeah, we love food. it's not an unhealthy relationship with food. i understand that portion control is the key to maintaining your weight and a little indulgence every once in a while won't exactly tip the scale in an unfavorable direction. since my boyfriend and i started dating a little over three and a half years ago, i have become a major foodie. he loves food and we always try to order different things when we go out to a)try something different and b)so we can try each other's food! he's also pretty much a garbage disposal (sorry, hon...you're still awesome :D) so if i don't finish what i'm eating, he will. i've also experimented more in cooking since we started dating and something that we always make are:

breakfast burritos!
breakfast burritos!

whether you're making one or five(which is how many we usually make), it's really simple!

Ingredients

  • eggs
  • shredded cheese (personally, i love aged cheddar)
  • breakfast meat (your choice! i've used ground pork and bacon; the ground pork, i seasoned only with Adobo)
  • flour tortillas
  • your favorite salsa
    Instructions:
Depending on what kind of meat you choose will determine how long it would take to cook, but i always begin prepping the meat first since the eggs take no time at all. Scramble the eggs. we use a little bit of milk in the eggs to make them fluffier and we add McCormick's Cajun seasoning for a little kick. When your main ingredients are done, you can heat your tortillas. i'd say i'm a seasoned vet at cooking tortillas so don't try it over an open flame...you may start your house on fire. Toss it on a non-stick skillet, over the heating element (whether it be gas or electric, doesn't matter) and flip constantly so it doesn't a) stick and b) burn. you only really need it to heat the tortilla. combine the eggs, your choice of meat, cheese, and salsa in the tortilla and you are set to eat!
